I love the holidays and always seem to start the New Year off more tired than I had planned. You should see my list of meals and shopping list of ingredients for each dish. I organize the list by day, breakfast, dinner and dessert. It’s nutty but it works.
Just like most of you, I’ve decided on my New Year’s resolutions and of course at the top of the list is GET FIT! Followed by… Be My Best Self and Finally Get the Body I’m Proud of!
I have vowed to take advantage of the beautiful run the trails, I’m going to purchase that cool retro mountain bike I’ve wanted with the toddler seat on the back so I can get my son out of the house and in nature, and I love cooking and eating too much to turn my back on food so I am going to make more meals at home, which is healthier than ordering in or eating out.
Another resolution that is most important to me is to try to celebrate life and the small accomplishments more often. People seem to focus on what’s lacking and what’s wrong more than seeing the good in things. So, no, I am not going to stop celebrating just because we are taking down our Christmas lights or are officially in to “just another year.” I’m going to pour myself a glass of wine in my new black wine glasses while I share with you a recipe that was a big hit with my family this holiday season. These Crab and Lobster Wontons will hopefully make any night, alone or with family and friends, a little more special and worth celebrating. Enjoy!
Crab and Lobster Wontons
What you’ll need:
- 8 oz cream cheese softened
- 8 oz package of imitation lobster meat
- 1 small container of crab meat (I used backfin crab meat)
- 1 bunch of green onions chopped
- 1 large egg
- ½ tsp hot sauce
- 1 pkg wonton wrappers
- Cooking spray
- Salt
- Soy sauce
Note: If you have never purchased wonton wrappers before, they may be tricky to find. I found mine in the produce section by the chopped vegetables, go figure. It’s probably best to ask someone to point you in the right direction.
Directions:
In a bowl, mix the cream cheese, green onions, egg and hot sauce until combined. Fold in the lobster and crab meat to the mixture and set aside.
You will need a small bowl of water to seal the edges of the wonton wrappers. If you have a large counter, clean the counter and place the wonton wrappers on the counter. Drop a teaspoon full of the mixture in the center of each wonton wrapper.
Using water and your fingers, seal the edges of each wonton to create a triangle. Before sealing completely, with your fingers, push any remaining air out of the wontons. I put a little water on my finger to wet in the inside edges and then used a little more water to completely seal the edges once the wonton was formed into a triangle. The photo below will show you how this will look. It may sound difficult but it’s a cinch!
Now to complete the wonton shape, fold the left and right corners in to overlap slightly and seal them together using a little more water on your fingers. Place the wontons to the side.
Put a pot of water on to boil and add salt to the water as if you were boiling pasta. Boil the wontons 8 to 10 at a time placing them in the boiling water one at a time while being careful not to crowd them because if they touch they will stick together. Boil the wontons until they float to the top of the water – approximately 3 to 5 minutes. Set the boiled wontons to the side on paper towel to remove the excess water.
Once you have boiled all of the wontons, you are ready for the final step. Spray a large frying pan with cooking spray and heat it to medium high. Brown both sides of the wontons, approximately 1-2 minutes. You will need to do this in small batches but they brown quickly.
Serve the wontons with a side of soy sauce. I added a few pieces of fresh ginger to the soy sauce because the ginger flavor is a perfect compliment to the flavors in this dish.
